Vegan Recipe: Potato Skins

Thanks to this past Sunday’s Desperate Housewives episode, I’ve been craving potato skins. I haven’t had anything similar since becoming vegan. Here is our version (I came up with the recipe and my husband and my older daughter made them). They were fantastic! The only thing that would have made them better would have been scallions on the top, but we didn’t happen to have any.

Simple and Easy Vegan Potato Skins:

  • 5 pounds potatoes
  • Earth Balance vegan butter
  • Toffutti cream cheese
  • Vegan Gourmet cheddar cheese
  • Smart Bacon
  • scallions

Bake potatoes in oven or microwave or crockpot (we used the microwave). Allow to cool slightly. Cut in half longways. Scoop out 2/3 of the potato innards (keep these for a different recipe later — I’m thinking potato soup). Spread with vegan butter — not too much. Spoon vegan cream cheese on top (inside only). Sprinkle grated cheddar over the top. Sprinkle uncooked chopped soy bacon over the top of the cheese. Bake at 375F for 30-45 minutes or until the potatoes are slightly crispy and the cheese is melted. Scallions and/or vegan sour cream would be a nice addition to the tops of these. Eat and enjoy!
