VEGAN RECIPE: Veganized Chex Mix
We LOVE-LOVE-LOVE Chex Mix (yes, this is Eloise inspired). This year’s boxes of Chex cereal seem to only have the microwaveable directions on it, but we still go by the oven version. Here is how we’ve modified and veganized our Chex mix.
VEGAN CHEX MIX:
- 12 cups stuff: We use a mix of Wheat Chex, Rice Chex, Corn Chex, Puffins (my favorite ingredient), pretzel sticks, garlic flavored bagel chips, Cheddar crackers (Eco-Planet), and sometimes roasted pumpkin seeds.
- 1/4 cup vegan butter (Earth Balance)
- 3 T vegan Worcestershire sauce (Annie’s Naturals)
- 1 T seasoning salt
- 1 T garlic salt OR garlic powder
- 1 T dried onions OR onion powder
Lightly melt butter and then add all spices and Worcestershire sauce. Mix well. Put all dry ingredients in 1-3 flat pans. Pour butter mixture as evenly as you can all over the cereal mix. Cook at 200F for one hour, mixing every 15 minutes (this is the important step). Once done, eat immediately and enjoy! :) This lasts for at least a week in a container, assuming you don’t eat it all by then.
