My younger daughter was in the mood for macaroni and cheese, but we didn’t happen to have any macaroni (or similar) noodles in the house. She found manicotti in the pantry and we decided to make a make-shift mac-n-cheese. It turned out delicious and very pretty!
Cheesy Manicotti
1 package uncooked manicotti noodles

I’ve written about this topic before in this article.
The new season of dance classes recently started up again and my daughter now needs jazz shoes in addition to ballet slippers (I still haven’t found child’s sized vegan jazz shoes, but I am certain I will soon). Dance shoes are somewhat difficult to find in vegan [...]

I have to credit Dr. John McDougall for my final decision to try a vegan diet 5.5 years ago. I’d been thinking about it for a while and reading everything I could on the topic. Yet, I was scared and hesitant. I was completely unsure whether or not it was a healthy [...]

Before I was vegan, I loved jalapeno poppers. I hadn’t thought about them in years until the other day when I saw a big pile of green chilies for sale at the grocery store. I immediately thought of poppers! So, here is our vegan version made with green chili peppers.

My youngest daughter loves mac and cheese. This was her one food that kept her from being a vegan for quite a while. Then, we learned how to make an easy version. I’ve attempted several more gourmet versions, but I’ve found them to be difficult to make, difficult to find the ingredients [...]

Ask any person today where calcium comes from and 99 times out of 100, you’ll hear: Dairy, cheese, milk, or calcium fortified orange juice.
I find it fascinating how the milk industry has used this marketing gimmick so effectively that practically everyone I have ever met truly and honestly believes this myth.
Let’s start over. What [...]

After watching a fun McDougall M.D. episode (they are 30 minute shows shown once per week), we made a yummy vegan lasagna based on a recipe on the show. My daughters enjoyed making it!
Ingredients:
1 package uncooked whole wheat lasagna noodles
1 package lite tofu
1 package vegan mozzarella cheese - cut however you want
1 package frozen [...]

My family and I live on an acreage south of Tucson, Arizona. We are fortunate enough to have land with many mature saguaros (as evidenced by many of my photographs on this site). We’ve owned our land for four years and we’ve lived on it for slightly over two. In those years, [...]

No, not all maple syrup is technically vegan or even vegetarian. Seems unbelievable, doesn’t it?
What is in maple syrup that isn’t vegan? Possibly animal fats.
A small amount of fat (oil) is often added to maple syrup during its processing in order to reduce the foaming. The fat is skimmed off at the [...]
