Ingredients:

One large container of mushrooms
One container of Tofutti cream cheese (or similar vegan cream cheese)

VEGAN RECIPE: “Chicken” Cordon Bleu

My husband used to really like Chicken Cordon Bleu before we decided to be a vegan family.  I recently saw Silk cream at the store and thought to try and make a vegan version of this old favorite.  Upon first bite, Greg stopped and muttered, “Wow, this is good.”  Second and third bites and all [...]

VEGAN RECIPE: Artichoke Dip

Here’s a quick and easy vegan artichoke dip I recently made:

VEGAN ARTICHOKE DIP:

2 bags frozen artichokes
~1/2 cup vegan mayonaisse (Vegenaise and Nasoya are my favorites)

~1/4 cup vegan parmesan (lots of versions - they are all good)

Thaw artichokes.  Mix all ingredients (I didn’t measure, so the amounts are approximate).  Heat in [...]

Is Your Cheese Vegetarian?

Yes, I am a vegan and the following information doesn’t apply to vegans. But, I feel it is important information to get out there.
Dairy cheeses aren’t necessarily 100% from cow milk, therefore they aren’t necessarily vegetarian-friendly.
Since many people find it easiest to incorporate a 100% vegan diet over time, you need to [...]

Vegan Recipe: Harvest Casserole (a.k.a. New Butternut Squash Casserole)

I love butternut squash. It tastes even better with pasta and vegan cheddar and pecans. Yum! I posted a delicious Butternut Squash Recipe last year (click to see). I recently updated my recipe to be slightly different (both are quite delicious).  Either would be a wonderful addition to any of your upcoming [...]

Vegan Recipe: Maid-Rite and Cheese Covered Fries (a.k.a. Volcano)

When a vegan gets a craving that involves non-vegan food, what should she do? Well… The other day, my daughters and I were talking about grandparents and one thing led to another and I was recalling a time when my mom and my mom’s dad (my Grandpa) and I went out to eat [...]

Vegan Cheesy Manicotti

My younger daughter was in the mood for macaroni and cheese, but we didn’t happen to have any macaroni (or similar) noodles in the house. She found manicotti in the pantry and we decided to make a make-shift mac-n-cheese. It turned out delicious and very pretty!
Cheesy Manicotti

1 package uncooked manicotti noodles
1 package Vegan [...]

“What would you do if your kids asked to eat animal products?”

I’ve been asked the above question. Specifically about dairy and eggs, but I’ll extend it to meat, bugs, and honey as well.
As Radical Unschoolers, we’ve promised our children they can make these types of decisions for themselves. Does this mean we leave them to fend for themselves? Not hardly. We’re there [...]

Complexion of Vegans and Doing Away with PMS

I’ve had several people tell me recently that they can always tell who are vegetarians/vegans and who are omnivores in a crowd due to the people’s complexions. I can, too. However, I’m usually 90% accurate and they are usually <1% accurate.
Does changing to a vegan diet affect complexion? The answer is an [...]
