RECIPE: Vegan Biscuits and Gravy

When I was a kid, I couldn’t stand biscuits and gravy.  My parents thought it was a real treat and raved about it on the rare occasions we had it (usually at a restaurant).  Since I’ve never liked it, I was surprised when I decided to make it a few days ago.  It started when [...]

VEGAN RECIPE: Artichoke Dip

Here’s a quick and easy vegan artichoke dip I recently made:

VEGAN ARTICHOKE DIP:

2 bags frozen artichokes
~1/2 cup vegan mayonaisse (Vegenaise and Nasoya are my favorites)
1 package Vegan Gourmet mozzarella cheese
~1/4 cup vegan parmesan (lots of versions - they are all good)

Thaw artichokes.  Mix all ingredients (I didn’t measure, so the amounts are approximate).  Heat in [...]

VEGAN RECIPE: Runza Hot Pockets

A delicious and hearty recipe for home or on-the-go food is runzas.  These are originally made with ground beef.  As vegans, we go without the animal.  Here’s our veganized version of this classic recipe.
Lisa’s Lowfat Vegan Runzas:

3 packages Morningstar Vegetable Crumbles (TVP and/or Boca brand work great, too)
1 whole head organic cabbage
salt
pepper
uncooked bread dough - [...]

Vegan Recipe: Harvest Casserole (a.k.a. New Butternut Squash Casserole)

I love butternut squash. It tastes even better with pasta and vegan cheddar and pecans. Yum! I posted a delicious Butternut Squash Recipe last year (click to see). I recently updated my recipe to be slightly different (both are quite delicious).  Either would be a wonderful addition to any of your upcoming [...]

Vegan Recipe: Maid-Rite and Cheese Covered Fries (a.k.a. Volcano)

When a vegan gets a craving that involves non-vegan food, what should she do? Well… The other day, my daughters and I were talking about grandparents and one thing led to another and I was recalling a time when my mom and my mom’s dad (my Grandpa) and I went out to eat [...]

Cheesy Vegan Lasagna

After watching a fun McDougall M.D. episode (they are 30 minute shows shown once per week), we made a yummy vegan lasagna based on a recipe on the show. My daughters enjoyed making it!
Ingredients:

1 package uncooked whole wheat lasagna noodles
1 package lite tofu
1 package vegan mozzarella cheese - cut however you want
1 package frozen [...]

Sauteing withOUT fat or oil

I’ve mentioned here before that in general my family does not use extra oils in cooking (we will eat vegan food at restaurants that has been made with oil, but we try to keep this to a minimum). We’ve found that oil just isn’t necessary for frying, sauteing, or baking. I will admit [...]

Vegan Jambalaya

We love jambalaya. It’s easy to cook and it tastes fantastic. You can throw together a variety of ingredients and it still tastes great. Missing an ingredient or have some extra zucchini you’ve been trying to use up, no problem! The tomatoes are the only crucial ingredient in the mix. [...]

McDougall Newsletters

As I received my “February 2008 issue of The McDougall Newsletter” a few days ago, I was reminded once again at how well thought-out and thoroughly researched Dr. McDougall’s articles are. Why the world at large chooses to ignore him, completely baffles me.
If you only do one thing to improve your long term and [...]

Supper Tonight: Roasted Red Peppers and Baked Potatoes

I don’t like to make complicated meals. I love to eat them, I just don’t care to physically make them. All recipes on this site are very simple to make, lowfat McDougall style, and vegan. Here is a recent supper we had.

Roasted Red Pepper Sandwich
6-8 red peppers (enough for 4 people)
2-4 slices [...]
